  • 200 gr roasted eggplant
  • 40 gr tahini
  • 10 gr sun-dried tomatoes
  • Parsley
  • Olive oil
  • 1 lemon
  • Salt
  • Pepper
  • 2 eggs
  • 1 slice sourdough bread
  • Arugula

Step 1 :In a bowl, combine roasted eggplant with tahini, sun-dried tomatoes, parsley, olive oil, lemon juice and spices


Step 2 :Lay it on the bread in a thick layer


Step 3 :Top with pastrami and arugula


Step 4 :Boil water in a pot


Step 5 :Add vinegar and crack eggs into the water


Step 6 :When egg whites are cooked through, remove eggs and serve over the bread


Step 7 :Enjoy.
