Step 1 :In a mixing bowl, combine chopped scallions, grated carrots, parsley, dill and garlic.
Step 2 :Make a paste by blending mustard, cashews, lemon juice, vinegar, salt and water in a blender.
Step 3 :Add the paste to the chopped vegetables and mix well.
Step 4 :Cut sweet potatoes into strips.
Step 5 :Add parsley, salt, pepper, oregano, 1/2 tsp garlic powder, juice from half a lemon, 1 tbsp of olive oil and mix well.

Step 9 :Spread vegan mayo over top burger bun and your burger is ready. Enjoy.
