  • Pınar Falafel
  • 20 g butter
  • 20 g flour
  • 500 ml of milk
  • 400 g roasted eggplants
  • 100 g tulum cheese or parmesan
  • Parsley
  • Salt
  • pepper
  • Nutmeg

Step 1 :Roast flour with melted butter. Gradually add the milk. Add salt, pepper and nutmeg.


Step 2 :Cook until thickened. Add roasted eggplant, cheese and parsley.


Step 3 :Cook the falafel with 1 tablespoon of olive oil, turning each side for 5 minutes.


Step 4 :Place the falafel on the aubergıne purée. Serve with grated cheese and chopped parsley.
