  • 1 egg
  • 1 lemon
  • 10 ml vinegar
  • 100 gr butter
  • Salt
  • Pepper
  • Chives

Step 1 :Whisk one egg yolk over a water bath


Step 2 :Add in juice of half a lemon and vinegar


Step 3 :Melt butter in another pot


Step 4 :Skim the milk froth


Step 5 :Slowly, stir the clarified butter into the egg mixture


Step 6 :Finally, garnish with salt, pepper and chives


Step 7 :Enjoy.
