  • Ingredients
  • New Year’s Whole Frozen Turkey
  • 1 onion
  • 1 carrot
  • 1 potato
  • 1 lemon
  • 1 orange
  • 10 ml honey
  • 250 ml vegetable oil Currants Fresh thyme Fresh rosemary Parsley
  • 100 gr butter
  • 35 gr flour Salt Pepper
  • 2 whole nutmegs

Step 1 :Defrost frozen turkey by placing in the fridge (+4 section) 72 hours before cooking


Step 2 :Wash and clean turkey, pat with paper towels to dry and bring to room temperature


Step 3 :Combine butter, honey, salt, pepper and grated nutmeg in a bowl


Step 4 :Use your hands to rub mixture over and under turkey’s skin


Step 5 :Stuff turkey with fresh herbs


Step 6 :Roughly chop onion, carrot, potato, lemon, orange, parsley stems and fresh herbs


Step 7 :Add olive oil, blend and place on a baking sheet


Step 8 :Truss turkey with butcher’s twine and cook for 2.5 hours at 180 degrees


Step 9 :Place a bowl of water inside the oven for turkey meat to stay tender


Step 10 :Keep oven door closed during cooking


Step 11 :If you open it, cooking time increases


Step 12 :Let cooked turkey sit for 1 hour


Step 13 :This allows for easy slicing


Step 14 :Remove the juices and vegetables on the baking sheet and pour into a pot


Step 15 :Add 35 gr flour and cook until thickened


Step 16 :Strain sauce over sliced turkey


Step 17 :Sprinkle with currants and rosemary.
