  • Ingredients
  • Pınar Beef Soudjouk
  • 1 kg eggplant
  • 2 tbsp olive oil
  • 2 onions (diced)
  • 2 cloves garlic
  • 1 lemon (juiced)
  • 1 tbsp flour
  • 1 cup milk
  • 2 tomatoes (grated)
  • 1 tsp nutmeg (grated)
  • 2 tbsp butter
  • Salt

Step 1 :Roast eggplants and clean


Step 2 :Soak in lemon water


Step 3 :Chop on a wooden cutting board


Step 4 :In a pot, make a roux with 2 tbsp butter and flour, and then adding milk


Step 5 :Stir in eggplants, and cook slowly over low heat, mashing with a fork


Step 6 :In another pot, sauté onions and garlic with olive oil


Step 7 :Stir in slice sujuk and cook


Step 8 :Add grated tomatoes and cook for 4-5 minutes


Step 9 :Sprinkle eggplant puree with salt and nutmeg


Step 10 :Place puree on a plate and make an opening in the middle


Step 11 :Nestle sujuk with tomato sauce over puree on the plate


Step 12 :Garnish with parsley and serve hot


Step 13 :Enjoy.
